This label was inspired by a picture taken of my wife Colene on our wedding day. The wine bursts with vibrant aromas of freshly cut grass, zesty lime, and juicy green apple, underscored by subtle notes of elderflower and a hint of minerality. Spontaneous fermentation and maturation in concrete tanks were used to lift the minerality. On the palate, crisp acidity is balanced by ripe flavors of gooseberry, tropical pineapple, and a whisper of white peach. The high altitude, cool-climate terroir of Elgin lends a refreshing, elegant structure, finishing with a clean, flinty finish that lingers beautifully. Perfect for pairing with seafood, light salads, or as a zesty aperitif.
